Japanese Milk Hearth Bread, crusty and soft bread

Yes… our favorite is freshly bread.

Thankful that I have so many bread recipe on the internet. Try, fail, try again…
 

Lately, I was tried to bake one of the famous Japanese bread. Milk Hearth Bread.

This is the simplest version of crusty chewy artisan bread. Just use straight forward kneading method, quick and easy ! Sprinkle it with bread flour and score it ….  you can feel be like a Sourdough baker…
 

 

 

 

 

 

You can score some low-to-mid hydration dough after shaping. I made with simple pattern.

 

 

Crusty outside like artisan bread, but soft inside. You can enjoy your bread with butter and peanut butter on the top. 

I made this bread many times and trying many variations.

Japanese Milk Hearth Bread

300 gr high protein flour or bread flour

35 gr sugar 

15 gr cooking oil

235 gr of 125 gr whipping cream and 110 gr cold water

4 gr instant yeast

4 gr salt

 How to make :

-          Mix whipping cream, water, oil, yeast and salt in separate bowl

-          Mix in the mixing bowl the all ingredients (flour and sugar)

-          Knead till smooth dough, windowpane test

-          Set aside to rest the dough until 45 mnt – 1 hour

-          Separate into 3 or 4 pcs round ball

-          Spread out the dough into long shape

-          Place the dough on a line baking pan, and set aside to rest again for 1 hour

-          Sprinkle with bread flour, score the surface

-          Bake at preheat oven for 20-25 mnt until golden brown
